During the weekend, I was given honey samples from The Philippines to evaluate. In order to meet the European Union Honey Legislation, honey must not exceed 20% moisture content. To check for compliance, I utilized a digital honey refractometer for precise measurements. If honey has a moisture content above 20%, it is more likely to ferment at a quicker rate if not consumed within a short period.
Some types of honey have naturally higher moisture content, which means they should be consumed before fermentation occurs.
